If you’ve been waiting for one of the Gulf’s best eating fish to come back into season, we’ve got good news. Gray triggerfish reopened for federally permitted Gulf for-hire vessels on August 1, giving anglers another great species to target alongside red snapper.

At KOKA Charters, triggerfish are always a welcome addition to the fish box. They’re fun to catch, delicious to eat, and they’re one of those fish that people often don’t know much about until they’ve caught (and tasted) one.

What Makes Triggerfish So Much Fun to Catch?

Unlike many reef fish that inhale a bait and run, triggerfish are notorious bait thieves. They’ll peck and nibble until they find just the right moment to steal your bait if you’re not paying attention.

Once hooked, they put up a surprisingly strong fight for their size. Their broad bodies make them pull hard all the way to the surface.

Kids especially love catching triggerfish because there’s almost always plenty of action when you find a good spot.

Five Fun Facts About Triggerfish

1. They’re Named After Their “Trigger”

Triggerfish have one of the coolest defense mechanisms in the ocean. Their large first dorsal spine locks upright like a trigger, making it difficult for predators to pull them out of rocks or reefs. A second spine acts like a release button, allowing the first spine to fold back down.

2. They Have Teeth Like a Human

Take a look inside a triggerfish’s mouth and you’ll understand why they steal so much bait. They have powerful, human-like teeth designed to crush crabs, shrimp, sea urchins, and other hard-shelled prey.

3. They’re Surprisingly Smart

Triggerfish are known for being curious and cautious. They’ll inspect a bait several times before committing, which is why experienced anglers often say catching them is just as much about patience as it is fishing skill.

4. They Live Around Structure

Gray triggerfish spend most of their lives around reefs, wrecks, ledges, and other hard-bottom habitat throughout the Gulf. That’s exactly where we target them on our offshore trips.

5. They’re One of the Best Eating Fish in the Gulf

Ask around any dock, and triggerfish will almost always make someone’s list of favorite fish to eat. Their meat is white, firm, mild, and holds together beautifully whether grilled, blackened, fried, or served raw.

Our Favorite Ways to Cook Triggerfish

๐ŸŒฎ Blackened Triggerfish Tacos

This is one of our favorites after a successful trip.

Season triggerfish fillets with your favorite blackening seasoning and sear them in a hot skillet with a little butter. Serve in warm tortillas with shredded cabbage, pico de gallo, avocado, fresh cilantro, and a squeeze of lime. A drizzle of spicy crema or chipotle sauce takes them over the top.

๐Ÿ‹ Fresh Triggerfish Ceviche

When the fish is as fresh as it gets, ceviche is hard to beat.

Dice fresh triggerfish into bite-sized pieces and marinate in fresh lime juice until the fish turns opaque. Toss with diced tomato, red onion, jalapeรฑo, cilantro, cucumber, avocado, and a pinch of salt. Serve chilled with tortilla chips or crackers.

It’s light, refreshing, and perfect after a hot day on the water.
